Food Truck for a BLIND man

Shane West was a chef for the Hyatt Regency until a couple years ago. Wait, did I mention he's totally blind? He had juvenile diabetes his entire life and lost his sight about six years ago. Went through the trauma of sudden blindness and then had several surgeries, one of which restored his sight for three months and then, just as suddenly, it was gone again. There is no hope for his left eye and very little hope for any restoration in his right eye at this point, so he is totally blind.
Last year he became very sick. VERY sick. He was on dialysis for 9 hours a day and both his kidneys and pancreas needed to be replaced, complications from the diabetes. When he got out of the hospital, his girlfriend moved him into her house to take care of him and his two kids (now 12 and 6). She became the sole provider, although Shane does get disability.
Shane needed a double transplant (kidney and pancreas) which is quite rare and has never been done in the Dallas area. Nobody actually thought he would get it, there was little hope for his life.
Suddenly doctors started talking about doing it but the cost was astronomical. His girlfriend sold everything she had to save the life of the man she loves. She even sold her house and everything they had, together and separately, to give this man a chance.
The surgery was successful and Shane wants to marry his girlfriend and provide for his family. His dream is to be the Chef he knows how to be in the Food Truck industry, with his sous chef driving, of course.
