What do you get when you combine soil, a school garden, and inquiring minds? A recipe for healthier students! During my time as a FoodCorps service member in Iowa - I taught students from pre-k to high school the importance of local, healthy foods and worked with food service to serve those same local foods in the cafeteria. I will never forget the day a kindergartener ran to proudly tell her mom, "I tried ARUGULA!" Or when a first grader raved about the fruit salad we made, "My mom won't believe I ate THIS!"
My service taught me the importance of FoodCorps' vision - "creating a future in which all our nation’s children––regardless of class, race, or geography––know what healthy food is, care where it comes from, and eat it every day."
