My daughter Mary was diagnosed with Celiac Disease in 2011. The only cure for this life threatening condition is a gluten free diet. For many however this can be financially challening, even impossible. Gluten is found in virtually ALL processed foods. Even the smallest amount of gluten can trigger a reaction.
Celiac Disease is a lifelong inherited autoimmune condition affecting children and adults. When people with Celiac eat foods that contain gluten, it creates an immune-mediated toxic reaction that causes damage to the small intestine and does not allow food and basic nutrients to be properly absorbed - proteins, carbohydrates, fats, vitamins, minerals and, in some cases, water. Even small amounts of gluten in foods can affect those with Celiac and cause health problems. Damage can occur to the small bowel even when there are no symptoms present.
Celiac Disease Foundation is a non-profit, public benefit corporation dedicated to providing services and support regarding Celiac Disease and Dermatitis Herpetiformis, through programs of awareness, education, advocacy and research
