2.9 trillion tons of food are wasted globally every year. 1 in 5 fruits and vegetables in the US are wasted simply because they don’t fit the stringent cosmetic standards that supermarkets place on their produce. These “imperfect” fruits and veggies are still perfectly useable and provide the same nutritional content of the “perfect” produce found on the shelves of supermarkets. However, they never make it to the dinner table and are instead left to rot in the field, resulting in wasted finite resources, increased greenhouse emissions, lost profits numbering in the billions, and squandered food that could be used to feed a rapidly growing population.
Today, 48 million individuals, or 1 out of every 6 people, in the United States are classified as food insecure and don’t know where their next meal is coming from. The overwhelming majority of them live in low-income neighborhoods near large, robust cities like Boston. Individuals living in these areas face a scarcity of healthy and affordable eating options that forces them to resort to eating high calorie, nutrient poor, highly processed fast food to survive. These foods have been linked to increases in obesity, heart disease, diabetes and other chronic issues that put immense burdens on society and lower the quality of life for millions.
Our initiative, FreshStart, is dedicated to solving these two pressing issues in the local Roxbury community. We take imperfect farm produce that might otherwise be discarded and turn them into nutritious, low cost meals that are ready-made and delivered right to your door.
We are so honored to have been selected for this year’s Clinton Global Initiative University (CGIU) Conference taking place at Northeastern University in October! The conference brings together student leaders, thinkers, and activists who have created various projects, or “commitments’, for a unique opportunity to meet with other like-minded individuals working towards a brighter future.
We have also been chosen for the Commitments Challenge, a fundraising competition run by CGIU. Whichever commitment raises the most money between now and October 12th will be recognized at the competition.
