Hi! For those of you that know me, you're aware of how much I love vegan food. I have been vegan for about 8 years, and when I was in Chicago there was a plethora of vegan dining options. Having recently moved to, well, it's not even a small town... it's really in the middle of nowhere, there really are no dining options. The result has been that I've been cooking a lot more and I truly enjoy it. I started by following recipes verbatim, but have gained some confidence and ability over the last year. I never considered culinary school because I assumed that all culinary schools were meat-based, or maybe just because I never thought I could be good at cooking. But after encouragement from my family and friends and some searching, I found Rouxbe, a premier online-based culinary school that offers a Professional Plant-Based Cook Certification. I took the free trial to make sure that the format was compatible with my learning style and that I'd be able to fit the required coursework and cooking time into my current schedule. I'm so excited for this possibility. I look forward to being able to introduce more people to a healthier, plant-based diet and show them how to incorporate these elements into their diets with ease. The tuition is due upfront for registration. It's a lot for me at the moment and would appreciate any help to meet the initial cost. Every little bit helps. Thank you for your time and support! -Emily
